When selecting your watermelon, look for one that's heavy with a smooth, firm rind and a large, creamy yellow field spot on the bottom. The stem (if attached) should be dry and not green. And give it a thump! Juicy watermelons will have a deep hollow sound.
- Sugar - The fresh watermelon is combined with granulated sugar to make a delicious Watermelon Syrup. You'll use this simple syrup to sweeten and flavor the drink.
- Sparkling Water - You'll also need some sparkling water, and pretty much any variety goes. I used Topo Chico, but other mineral waters, club soda, or seltzer will also work.

- Make syrup. You'll start by puréeing the watermelon, then straining it to remove the pulp. Once you've done that, mix the juice with the sugar. Then stir occasionally until the sugar dissolves into the juice.
- Add syrup to glass. Transfer some of the syrup to your serving glass.
- Stir in sparkling water. Add the sparkling water, then mix well.

- 2 heaping cups chopped watermelon
- 1 cup sugar
For Soda:
- 1 cup sparkling water (chilled)
- ice for serving

- Place a fine mesh strainer over a bowl, then strain the puréed watermelon to remove the pulp.
- Discard pulp, then measure one cup of strained watermelon juice (save extra juice for another use). Add the juice to a mason jar (or other container), along with the sugar.
- Stir the watermelon-sugar mixture for a couple minutes. Then let the mixture sit until the sugar is totally dissolved, stirring every 5 to 10 minutes. It should take about 30 to 45 minutes total.
Prepare Soda:
- Add ¼ cup watermelon syrup to a glass, then stir in the sparkling water.
