    You need just a few basic ingredients for this simple recipe:

    • Rhubarb - Of course, you'll need some fresh rhubarb. To ensure it cooks evenly, choose stalks that are about the same width. And for the prettiest color, choose bright red rhubarb.
    • Sugar - Granulated sugar is a must for balancing out the rhubarb's tart flavor. Other sweeteners will also work. Check out the Variations section for tips.
    • Lemon - Fresh lemon zest brightens up the finished sauce. Orange zest would also work great.

    1. Prep rhubarb. Start cutting your rhubarb into two-inch lengths. You can slice the rhubarb on an angle like I did, or simply cut it straight across.
    2. Mix ingredients. Next, place the rhubarb in your baking dish (I used this beautiful ceramic dish). Add the other ingredients, then mix well.
    3. Cover + bake. Cover the baking dish with foil, then bake the rhubarb until tender.
    4. Test for doneness. You can check the rhubarb by piercing it with a sharp knife. The fruit should be very tender (almost falling apart).

    Ingredients

    • 8 ounces (227 grams) rhubarb, cut into 2-inch pieces (about 2 cups)
    • ⅓ cup granulated sugar
    • ½ lemon, zested
    • ½ teaspoon ground cardamom
    • 1 tablespoon water

    Instructions

    • Preheat oven to 375°F (190°C).
    • Combine rhubarb, sugar, lemon zest, cardamom, and water in an 8x8-inch baking dish. Mix well.
    • Cover pan with foil, then roast rhubarb until it's tender and can be easily pierced with a knife (about 15 to 20 minutes).
    • Serve rhubarb warm or chilled, paired with ice cream, cake, and other sweet and savory dishes.

    Notes
