    Easy Yogurt Parfait

    This yummy Yogurt Parfait is the perfect morning treat ... easy to make, packed with fruit and crunchy granola, and so delicious!

    Is it just me, or is it easier to wake up when you know there'll be a tasty breakfast waiting? Something to look forward to, I guess ... ha!

    I tend to make the same breakfast over and over again, like my fave Egg Sandwich, Overnight Oats, or a spicy, homemade Breakfast Burrito. Every once in a while though, I like to change things up.

    And when I do, I loooove a layered Yogurt Pafait.

    This easy breakfast recipe is the perfect combination of crunchy, creamy, and fruity. Basically, the perfect way to start the day!

    About This Recipe

    This Yogurt Parfait is so tasty, and the layers are so pretty ... as perfect for serving guests, as it is for an easy weekday breakfast.

    Not only are these Parfaits a feast for the eyes, but the combination of flavors is wonderful. You have the crunch from the granola, the smooth, creamy yogurt, and the fresh, sweet berries. Yum!

    I prefer to assemble these Yogurt, Fruit, and Granola Parfaits just before serving. That way the granola stays crunchy.

    However, if you're serving a crowd or want to prep them ahead of time (they're great for meal prep), that works, too. They'll still be delicious, but not quite as crunchy.

    Ingredients

    The ingredients you'll need for this Fruit and Yogurt Parfait are simple, healthy, and delicious!

    • Greek Yogurt
    • Maple Syrup
    • Vanilla Extract
    • Strawberries
    • Blueberries
    • Granola

    I like using Greek Yogurt for parfaits. It's so thick and creamy. And although you could use store bought vanilla yogurt, I prefer to flavor it myself. That way, I can control exactly what goes in it.

    For a little crunch, I used my favorite Healthy Homemade Granola. It's so delicious and easy to make, and again, I like knowing what's in it.

    Feel free to use your favorite berries in this recipe ... I love the combination of strawberries and blueberries!

    You'll also need a clear glass to serve the parfait in. I used stemless wine glasses, but a regular glass works just as well. If you'll be eating your homemade parfait on the go, try making it in a mason jar.

    Do you eat a Vegan or Gluten-Free diet? This recipe is easy to make vegan (and dairy free), simply by using vegan Greek yogurt and granola. You can also make the recipe gluten-free, by choosing gluten-free yogurt and granola.

    How to Make a Yogurt Parfait

    So let's get started!

    This recipe is quick and easy to make. For maximum crunch, assemble the parfaits as close to serving time as possible.

    Making the Yogurt

    Preparing the yogurt is as simple as stirring together Greek yogurt, maple syrup, and vanilla extract until smooth.

    Taste the yogurt before moving on, and add a little extra maple syrup if you'd like it sweeter.

    Tip: If you want to save a little time, you can use vanilla Greek yogurt for these Parfaits. I prefer to make my own though, so I can control the ingredients and sweetness level.

    Choosing the Granola

    I used my Healthy Homemade Granola for these Parfaits. If you've never made your own granola, give it a try!

    It's simple and easy to make, plus so delicious. Plus, you can prep it a few days or even a week before making this recipe.

    Layering the Parfait Ingredients

    Next, you're going to layer the ingredients.

    This recipe is made with equal parts yogurt, berries, and granola. So you're going to place ¼ cup of yogurt in the bottom of each glass, followed by ¼ cup granola, then ¼ cup berries.

    Repeat these layers once more time, and you're done. So simple, right?

    Tip: when you're adding the ingredients, spread them out so they touch the glass. That way, you'll see all the layers really well.

    Customizing the Parfaits

    This recipe is super easy to customize simply by using different berries, types of granola, or even flavored yogurt.

    You can also play around with quantities of yogurt, fruit, and granola. Prefer a creamier parfait? Add more yogurt or use less granola. Love fruit? Use more berries.

    Ingredients

    • 2 cups Greek yogurt (I used nonfat.)
    • 2 tablespoons maple syrup
    • ½ teaspoon vanilla extract
    • 1 cup diced strawberries
    • 1 cup blueberries
    • 2 cups granola (Try my Homemade Granola)

    Instructions

    • Mix together yogurt, maple syrup, and vanilla.
    • Combine strawberries and blueberries in a small bowl.
    • Place ¼ cup yogurt in a clear glass. Top with ¼ cup granola, and then, ¼ cup berries.
    • Repeat layers one more time.
    • Serve parfaits immediately or refrigerate until ready to eat. Enjoy!

    Notes

    The calories in these parfaits will vary greatly, depending on what kind of yogurt and granola you choose. I used my Homemade Granola recipe, which is linked in the recipe, and it's lower in calories than many store bought granolas.
