- Dates - I used medjool dates, which have wonderfully sweet, caramel-like flavor and sticky / chewy texture, for this recipe. Look for them in your grocer's produce section or with other dried fruits. Other dates will also work, if you can't find them. Tip: Medjool dates are a good source of fiber, antioxidents, and minerals. They are quite sweet and caloric though, so enjoy in moderation!
- Peanut Butter - Rich peanut butter pairs perfectly with the sweet dates! I like to make these Stuffed Dates with smooth peanut butter, but chunky also works (and adds a great texture). Other nut and seed butter cans also be used!
- Chocolate - Although any chocolate works, I recommend using dark chocolate. It's less sweet than milk chocolate, which is important, because the dates are super sweet. I used Lindt 70% Dark Chocolate.
- Salt - A pinch of salt makes these bite-sized treats taste extra delicious! I recommend using a flaky salt, like Maldon Sea Salt Flakes, for the best flavor and texture. But regular old kosher salt also works great!

- Prep dates. Start by cutting the dates from end to end (but not all the way through). Then remove the pit.
- Fill with peanut butter. Use a spoon to fill each date with peanut butter. Tip: I've found that ½ teaspoon peanut butter is more than enough, but you can add more if you prefer.
- Drizzle with chocolate. Melt the chocolate in your microwave (or on the stove), then drizzle the chocolate over the stuffed dates.
- Top with salt. Add a pinch of salt on the top of each date.
- Chill. While the dates can be eaten right away, they taste even better when chilled. I prefer to freezing them, because they get extra chewy. But you can also store them in your fridge.

Stuffed Dates with Peanut Butter and Chocolate
Ingredients
- 25 medjool dates (other other dried dates)
- 12 ½ teaspoons peanut butter
- ½ (3.5 ounce / 340 gram) bar dark chocolate
- Maldon sea salt flakes (or other coarse, flaky salt)

- Line a baking sheet with parchment paper. Set aside.
- Cut dates from end to end (but not all the way through). Remove pits, then place dates on baking sheet.
- Fill each date with ½ teaspoon peanut butter (or more, if desired).
- Chop chocolate into small pieces, then place in a small bowl. Microwave for 20 seconds, then stir. Continue microwaving in 10 second increments (stirring well in between), until chocolate is completely melted.
- Use a spoon to drizzle melted chocolate over dates. (You may have a little left over.)
- Top each date with a pinch of sea salt.
- Transfer baking sheet to your freezer. When frozen, place dates in an airtight container.
- Thaw dates for about 10 to 15 minutes before eating. Enjoy!
