Peaches are surprisingly versatile, and I've used them in all sorts of sweet and savory recipes. Lately, I've been pairing them with crunchy crostini (another favorite ingredient around here), and this mouthwatering Peach Crostini is the result. This tasty recipe is all about summer simplicity! There's very little cooking required, you need just a few ingredients, and the fresh flavors are impossible to resist. This is the perfect summer snack for peach lovers!

    Ingredients

    For Crostini:

    • 1 baguette
    • 1 to 2 tablespoons extra virgin olive oil
    • ½ teaspoon kosher salt

    For Assembly:

    • 4 ounces (113 grams) goat cheese
    • 2 peaches, each cut into 12 wedges (24 slices total)
    • 2 to 3 tablespoons hot honey
    • fresh thyme leaves (from a sprig or two)

    Equipment

    • Pastry Brush

    Instructions

    Make Crostini:

    • Preheat oven to 425°F (220°C).
    • Use serrated knife to cut baguette into 24 thin slices (on an angle, ¼-inch thick). Save the leftover bread for another use.
    • Place the slices on a large baking sheet in a single layer. Brush both sides with olive oil, then sprinkle lightly with salt.
    • Bake for 5 to 10 minutes, or until crisp throughout and lightly golden (no need to flip). Set aside and let cool.

    Assemble Crostini:

    • Spread each crostini lightly with goat cheese.
    • Top each crostini with a peach slice.
    • Drizzle peaches with hot honey, then top with a few thyme leaves.
    • Serve immediately. Enjoy!

    Notes

    You should be able to get about 40 slices from a ½-pound (255 grams) baguette, so you will have leftover bread. If you want use all the bread, double the toppings or make a different topping (like this Tomato Crostini). Store leftover toasts in an airtight container (read my Crostini recipe for storage tips).
    To avoid soggy toasts, make sure to assemble this appetizer shortly before serving. Crostini toasts can be baked in advance.
    You can tell if peaches are ripe by giving them a gentle squeeze (they should have a little give). If your peaches need to ripen, let them sit at room temperature until they're ready to eat.
