    • Avocado - You'll need two large avocados for the guacamole-like topping. I recommend using Haas avocados, which have the best flavor. Tip: For the creamiest texture, make sure your avocados are perfectly ripe (they should have a little give when you gently squeeze them).
    • Garlic - A little fresh garlic adds tons of flavor to the mashed avocado.
    • Lemon - You'll also add some fresh lemon juice to the topping. It's enhances all the other flavors!
    • Tomatoes - This recipe calls for grape tomatoes. I used a colorful mix of tomatoes, but regular grape tomatoes or cherry tomatoes will also work great.
    • Seasoning - You'll season the avocado with kosher salt. And a sprinkle of everything bagel seasoning is the perfect finishing touch!
    • Crostini - For the base, you'll make homemade crostini (don't worry, it's super easy!) with a baguette, extra virgin olive oil, and kosher salt.

    How to Make Crostini with Avocado

    This Avocado Toast Appetizer couldn't be easier to make! You'll find a detailed recipe card below, but here's a quick overview of the steps:

    1. Bake crostini. Start by thinly slicing the bread, then brush it with olive oil and sprinkle with salt. Bake the crostini just until it's crisp throughout and lightly browned.
    2. Prep tomatoes. While the toasts bake, cut each of your tomatoes into three slices.
    3. Make avocado topping. Next, mash the avocado together with the garlic, lemon juice, and salt. Tip: For a chunkier topping, mash the avocado less. For a smoother topping, mash the avocado more.
    4. Top crostini with avocado. When the crostini has cooled, top each toast with a dollop of the mashed avocado.
    5. Add tomatoes. Place three tomato slices on top of the avocado.
    6. Sprinkle with seasoning. Finish the crostini by adding a generous sprinkling of everything bagel seasoning.

    This recipe is endlessly customizable! Here are a few ideas to try:

    • Cooked Tomatoes - Replace the fresh tomatoes with Roasted Grape Tomatoes or Roasted Cherry Tomatoes.
    • Other Veggies - Swap out the tomatoes for other fresh veggies, like chopped cucumber, sliced radishes, or chopped green onions. Cooked vegetables, such as corn, mushrooms, or zucchini also make a delish topping. For an extra zing of flavor, top the toasts with pickled red onions, sliced jalapeños, or kimchi.
    • Eggs - Top the Tiny Avocado Toasts with sliced hard boiled eggs or mini fried eggs (use quail eggs).
    • Nuts + Seeds - Instead of everything bagel seasoning, top the appetizer with finely chopped walnuts, pecans, pistachios, almonds, pepitas, sesame seeds, or hemp seeds.
    • Lime - Use lime juice instead of lemon juice.
    • Cheese - Add an extra layer of flavor by sprinkling crumbled feta, goat cheese, sharp cheddar, or queso fresco over the top.
    • Herbs + Spices - Top the toasts with fresh herbs (like basil, dill, cilantro, or tarragon), or add a sprinkle of crushed red pepper flakes, adobo seasoning, shichimi togarashi, or Tajín.
    • Sauces - Drizzle on a favorite sauce, such as Homemade Pesto, balsamic glaze, Black Bean and Corn Salsa, or Romesco Sauce. If you like spicy flavors, garnish the crostini with chili crisp, hot sauce (I like Secret Aardvark), sriracha, or hot honey.
    • Crostini - I used a baguette for this recipe, but the crostini can also be made with other breads, such as focaccia or sourdough. If needed, cut the bread into smaller pieces (just big enough for two bites).
    • Gluten Free - Make the crostini with a GF baguette, and if you have an allergy, double check all other labels.

    Storage

    This Avocado Tomato Crostini is best served shortly after it's made. However, you can make the toasts, then store them in an airtight container (they'll taste freshest when eaten within two to three says, but will keep for up to two weeks). You can also slice the tomatoes a couple hours in advance.

    PRO TIP: The avocado topping will turn brown if made in ahead of time, so I recommend preparing it just before assembling the toasts. If that’s not an option, refrigerate it in a covered container with plastic wrap pressed directly onto the mashed avocado’s surface. Mix well before topping the crostini.

Bruschetta on the other hand, is typically made with rustic-style bread, sliced a little thicker, and rubbed with garlic. Traditionally, bruschetta is cooked on the grill, which gives the finished toasts a little char and a slightly smokey flavor.

    Are crostini served hot or cold?

    Crostini can be served hot, cold, or at room temperature, depending on the toppings. It's frequently eaten at room temperature, which makes it perfect for parties!

    Is crostini supposed to be hard?

    Ingredients

    For Crostini:

    • 1 baguette
    • 1 to 2 tablespoons extra virgin olive oil
    • kosher salt

    For Avocado Topping:

    • 2 large avocados
    • 1 tablespoon fresh lemon juice
    • 1 clove garlic, finely minced
    • ½ teaspoon kosher salt

    For Assembly:

    • 24 grape tomatoes, each cut into 3 slices
    • 2 tablespoons everything bagel seasoning

    Equipment

    • Serrated Knife
    • Pastry Brush
    • Baking Sheet

    Instructions

    Prep Crostini:

    • Preheat oven to 425°F (220°C).
    • Using serrated knife, cut 24 slices from the baguette (on an angle, ¼-inch thick). Save the remaining bread for another use.
    • Place the slices on a large baking sheet in a single layer. Brush both sides with olive oil, then sprinkle one side lightly with salt.
    • Bake for 5 to 10 minutes, or until crisp throughout and lightly golden (no need to flip). Set aside and let cool.

    Prep Avocado Topping:

    • Slice avocados in half, then remove pits. Scoop pulp into a medium bowl.
    • Add lemon, garlic, and salt to avocado, then mash ingredients together.

    Assemble Crostini:

    • Divide mashed avocado evenly between crostini, then top each toast with 3 tomato slices.
    • Sprinkle each crostini with ¼ teaspoon everything bagel seasoning.
    • Serve immediately. Enjoy!

    Notes

    I recommend using Haas avocados for this recipe, which have the best flavor. To tell if your avocados are ripe, give them a gentle squeeze (they should have a little give). If the stem is still attached, it should easily peel it off, and if ripe, the avocado should be light green underneath.
