- Peaches - You'll use fresh peaches, of course! For the best results, choose the most fragrant, flavorful peaches that you can find. Ripe peaches should have a little give when you squeeze them, and for this recipe you don't want them to be over-ripe or too soft, because they will be hard to handle. Peaches are often hard when you buy them, so let them sit on your counter to ripen for a few days, if necessary, before making the recipe.
- Dough - Feel free to make your own pizza dough, or buy a ball at your grocery store.
- Ricotta Topping - The creamy sauce on this white pizza give the recipe a savory peaches and cream flavor and luscious texture that you're sure to love. It's made with a mixture of ricotta cheese, fresh lemon zest, minced garlic, salt, and pepper.

- Make ricotta topping. Start by stirring together the ricotta, lemon zest, and garlic. Then season the mixture to taste with salt and pepper.
- Press dough onto pan. Brush your pan lightly with olive oil, then top with the dough, stretching and pressing it out to the edges of the pan. Tip: If your dough contracts and won't hold its shape, let it rest for about five minutes, then try again. You may need to repeat this process a few times.
- Spread ricotta topping over dough. Use a spatula or spoon to spread the ricotta mixture evenly over the dough.
- Top ricotta with mozzarella. Cut your mozzarella into thin slices, then arrange it over the ricotta.

Ingredients
- ½ cup ricotta cheese
- 1 large clove garlic, minced
- 1 lemon, zested
- kosher salt and pepper
- extra virgin olive oil
- 1 ball pizza dough
- 8 ounces (226 grams) fresh mozzarella, thinly sliced
- 2 medium peaches
- 1 to 2 tablespoons hot honey
- handful fresh basil leaves, thinly sliced

- Preheat oven to 450 degrees with rack in lowest position.
- Mix ricotta, garlic, and lemon zest. Generously season to taste with salt and pepper. (Save lemon juice for another recipe.)
- Lightly brush pizza pan with olive oil (or spray with nonstick spray), then top with pizza dough. Use your hands to spread dough across pan.
- Spread ricotta mixture evenly over pizza dough, leaving a 1-inch border around edge.
- Top ricotta with sliced mozzarella.
- Quarter peaches, then cut each quarter into three slices (you should have 24 slices total when done). Arrange peaches over mozzarella.
- Bake pizza on lowest oven rack for about 15 to 20 minutes, or until crust is browned and crisp.
