I love to entertain, but I tend to get a little type-A about it.

It's fun to put out an impressive spread, serve tasty wine, and show off an impeccable apartment. Unfortunately, that usually means scrambling beforehand, because let's get real: my apartment is never spotless, and it's a lot of work to prepare a great meal.

Lately, I've been doing things a little differently. I like to start things off with a great dip or spread, served with fresh veggies and crackers. Then I follow things up with an easy dinner (like pizza made with premade crust) and finish with a dessert from the bakery. How simple is that?

This creamy Ricotta Blue Cheese Spread is one of my favorite appetizers, and it's the perfect addition to any party! It's easy to make, and totally addictive ... one bite is never enough.

How to Make Ricotta Blue Cheese Spread

This spreadable blue cheese dip is so delicious, and the best part is you only need three ingredients to make it ... so simple!

You can use any kind of blue cheese for this easy spread: Gorgonzola, Stilton, Roquefort, etc. It all works, so pick your fave.

Once you've selected your cheese, simply mix it together with ricotta and garlic, then season to taste with salt. That's all there is to it.

I like to serve this Blue Cheese Spread a little chunky, but you can mash up the blue cheese to make it as smooth as you want.

I've been making this creamy Blue Cheese Spread for years, and I love it with crackers and fresh veggies. Their mild flavors pair perfectly with the bold dip.

This Ricotta Blue Cheese Spread can also be served on toast or an English muffin for a light meal or used as a spread for a sandwich or burger. So get creative!

However, you serve it, this delicious Ricotta Blue Cheese Spread is sure to become a favorite recipe!
