    There is one fruit that I always keep stocked in my fridge: blueberries! I just love their tart flavor, and they're so tasty in all my favorite breakfasts, snacks, and desserts.

    If you're a blueberry lover too, then this delicious Blueberry Compote recipe is for you! I know compote may sound fancy, but it's simply a cooked Blueberry Sauce, and it's very quick and easy to make.

    You are going to love the delightful sauce ... it's truly the perfect way to show off fresh blueberries! The scrumptious sweet-tart flavor makes it an excellent dessert sauce (serve it over ice cream, cheesecake, and more), and it's perfect for topping everything breakfast classics (like pancakes and waffles) to toast, too!

    The ingredients for this easy sauce can be found at any grocery store! Here's what you'll need:

    • Blueberries - Of course, fresh blueberries are the star here! Use the sweetest, most flavorful berries for the best results. Frozen blueberries may also be used.
    • Sugar - The berries are stewed in a mixture of granulated sugar and water until soft.
    • Lemon - A little lemon juice brightens up the other flavors and adds a tart element that complements the sugar.
    • Salt - Just a pinch of salt (I recommend using Kosher salt) brings out all the other flavors.

    This homemade Blueberry Sauce is naturally vegetarian, vegan, dairy free, and gluten free ... which means everyone at your table can enjoy it!

    How to Make Blueberry Compote

    This tasty fruit sauce is super easy to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Combine the sugar and water. Start by combining the sugar and water in a small pot. Cook this mixture over medium heat, stirring constantly until the sugar has dissolved.
    2. Add blueberries, lemon, and salt. Once the sugar has dissolved, you'll increase the heat to medium high, then add half the blueberries, lemon juice, and pinch of salt. Bring to a boil.
    3. Simmer blueberries. Reduce the heat to a simmer, then cook the mixture (stirring occasionally), until the berries are tender and have released their juices.
    4. Add remaining berries. Stir in the remaining blueberries, then continue cooking the mixture just until the recently added berries are tender, but have not popped.

    This tasty Blueberry Topping is perfect as-is, yet it's also simple to customize! Here are a few ideas:

    • Mixed Berries - Have some other fruit you need to use up? Replace some of the blueberries with strawberries, raspberries, peaches, or other fruit. Check out my Berry Compote recipe for tips.
    • Sugar - Swap in a different sugar, such as brown sugar, honey, or maple syrup, for the granulated sugar.
    • Vanilla - Add extra flavor by stirring in a teaspoon or two of vanilla extract along with the other ingredients.
    • Without Lemon - Although this recipe contains lemon juice, you really can't taste it. However, it does add a needed counterpart to the recipe's sweetness. If you don't like or don't have any lemon, you can leave it out.
    • More Lemon Flavor - As mentioned above, the lemon juice in this recipe doesn't add much flavor. To add more lemon flavor, zest your lemon before juicing it. Then add the zest along with the second half of the berries. You could also use other citrus, such as lime or orange.
    • Thicker Sauce - This recipe is naturally thickened by the pectin found in the blueberries, so it typically doesn't need any additional thickening. However if your berries are super juicy or if you'd prefer a thicker sauce, you can add a cornstarch slurry. Whisk together one tablespoon cornstarch with two tablespoons water, then stir in just enough of the slurry to the simmering sauce, to thicken it as desired (keep in mind that it will also thicken as it cools).

    You can enjoy this fresh berry sauce on its own (it's amazing with whipped cream), but it's even better when used as a topping! Serve it over:

    • Ice Cream - The sweet-tart blueberries pair perfectly with lemon or vanilla ice cream!
    • Cheesecake - Dollop over a slice of rich, creamy cheesecake.
    • Cake - Use it to top angle food cake, pound cake, and more. You could also thicken the sauce with a slurry, then use it as a cake filling.

    Ingredients

    • ¼ cup granulated sugar
    • 2 tablespoons water
    • 2 cups (1 pint / 283 grams) blueberries, divided
    • 1 tablespoon fresh lemon juice
    • pinch kosher salt

    Equipment

    • Small Pot (preferably with a heavy bottom)

    Instructions

    • Combine sugar and water in a small pot over medium heat.
    • Cook, stirring constantly, until sugar is dissolved (about 3 to 4 minutes).
    • Increase the heat to medium high, then add HALF the blueberries (1 cup), plus all the lemon juice and a pinch of salt. Bring mixture to a boil, then reduce heat to a simmer, stirring frequently.
    • Simmer the blueberry mixture, stirring often, until the berries are tender and have released their juices (about 7 to 10 minutes).
    • Stir in the remaining blueberries (1 cup), then continue simmering just until the berries are softened, but not burst (about 5 more minutes).
    • Serve compote warm or chilled over cheesecake, french toast, pancakes, ice cream, and more. Enjoy!

    Notes

    This recipe makes about 1 cup of sauce, or 4 servings (¼ cup each).
    Blueberries contain pectin, which naturally thickens this sauce. However, if you'd prefer a thicker sauce, make a slurry by whisking together 1 tablespoon cornstarch and 2 tablespoons water. When the sauce is finished cooking, add the slurry into the simmering sauce (stirring constantly), mixing in just enough to reach your desired thickness.
    For extra lemon flavor, zest your lemon before juicing it, then stir the zest in with the second half of the blueberries.
