According to my six year old niece (who helped me make them), these Watermelon Ice Pops are good, very good, and (when pressed to be more descriptive) super good. And I have to agree.
These Watermelon Ice Lollies aren’t just tasty though … they’re also healthy. Watermelon is packed with nutrients, and it’s almost all water (92%). Which means it’s hydrating and low-cal. Plus, they vegan, dairy free, and gluten-free.
These refreshing fresh fruit popsicles are the ultimate summer treat, and they couldn’t be easier to make!
Watermelon Popsicle Ingredients
I love making my own real fruit popsicles, because I get to control all the ingredients. No fake flavors, zero weird ingredients, and way less sugar.
In fact, you only need three ingredients to make these Watermelon Ice Lollies. Fresh, juicy watermelon is the star, of course … use the freshest, sweetest one you can find.
A little lime juice brightens the fruity flavor. And a touch of sugar enhances the watermelon’s sweetness, but you can leave it out if you prefer (watermelon is naturally sweet anyway).
How to Make Watermelon Popsicles
These homemade Watermelon Ice Pops couldn’t be easier to make.
Start by cutting the watermelon into one-inch cubes. Then combine the fruit in a blender with the fresh lime juice and a little sugar.
The sugar is totally optional. Feel free to skip it to make no sugar Watermelon Popsicles.
Puree the watermelon until it’s totally smooth. It should only take a minute or two.
If you want, you can strain the watermelon juice through a fine mesh strainer. It’s not very pulpy though, so I don’t really think it’s necessary.
Then, it’s time to fill your popsicle molds.
My popsicle molds hold 1/3 cup each, so I got eight popsicles out of this recipe. Depending on the size of your molds, you may get more or less pops.
As you fill the molds, leave about a 1/2-inch of space at the top.
If you have any leftover juice, drink it. It’s so delicious!
Freeze this Watermelon Popsicles recipe overnight or until solid. It should take about four hours or so.
Once they’re frozen, your Watermelon Pops are ready to eat.
