This Tropical Breakfast Parfait is so simple to make! You’ll start by mixing together Greek yogurt, Simply Orange Juice, and honey to make a lightly sweetened, orange-flavored yogurt. Make sure to use Greek yogurt, which is really thick, otherwise your finished yogurt will be too thin.
To assemble these Tropical Breakfast Parfaits, simply layer the flavored yogurt with your favorite granola and diced pineapple. (I made sure to choose a simple granola made without fruit, so it would fit this recipe’s tropical flavor profile.) Then, top the parfaits with a generous pinch of crunchy coconut chips. Yum!
Since pineapple has so much liquid in it, I recommend assembling this Tropical Breakfast Parfait right before you plan to serve it, although you could mix up the yogurt ahead of time. That way, the granola won’t get soggy.

- 2 cups plain Greek yogurt
- 2/3 cup Simply Orange Juice
- 3 tsp. honey
- 2 cups granola
- 2 cups diced pineapple
- coconut chips
- Whisk together Greek yogurt, orange juice, and honey.
- To each of 4 small glasses or bowls, add 1/4 cup yogurt mixture. Top with 1/4 cup granola and 1/4 cup pineapple.
- Repeat layers one more time.
- Top each parfait with a pinch of coconut chips.
- Serve parfaits immediately. Enjoy!
