Are you trying to develop healthier eating habits this year? After indulging in a few too many cookies and a skipping a few too many workouts this past holiday season, I'm totally with you.
If you haven't already, now is the perfect time to start your year refreshed. I'm trying to watch my portion sizes, eat nutritious snacks, and be more active. My sister and I even signed up to run a 5K in a couple months.
Although it's been a while since I've done any running, I'm really looking forward to it. Time to start training!
One thing that always starts my day off on the right track is fitting in some exercise, followed by a delicious breakfast, like this Tropical Breakfast Parfait!
Tropical Breakfast Parfait
I love a yummy Pineapple Parfait in the morning (this Mango Parfait is another fave). They're fun to eat, and the layers of flavor are so delish.
This flavor-packed Breakfast Parfait is a favorite! It's the perfect reason to get my butt out of bed on cold winter mornings and get moving!
And even if I can't get to the tropics myself this year, at least I can pretend I'm relaxing on the beach with every bite of this tasty parfait!
I found everything I needed to make this yummy Breakfast Parfait recipe, including Simply Orange Juice, granola, fresh pineapple, and Greek yogurt, at Tom Thumb.
How to Make a Breakfast Parfait
This Tropical Breakfast Parfait is so simple to make!
You'll start by mixing together Greek yogurt, Simply Orange Juice, and honey to make a lightly sweetened, orange-flavored yogurt.
Make sure to use Greek yogurt, which is really thick, otherwise your finished yogurt will be too thin.
To assemble these Tropical Breakfast Parfaits, simply layer the flavored yogurt with your favorite granola and diced pineapple.
I love using my Homemade Granola in this recipe! If you use store-bought granola though, look for one that will complement the other flavors in the Pineapple Parfait.
Then, top the parfaits with a generous pinch of crunchy coconut chips. Yum!
Since pineapple has so much liquid in it, I recommend assembling this Tropical Breakfast Parfait right before you plan to serve it, although you could mix up the yogurt ahead of time. That way, the granola won't get soggy.
This parfait also makes a great snack. Just cut the serving size in half for a delicious midday treat.

Tropical Breakfast Parfait
Ingredients
- 2 cups plain Greek yogurt
- â…” cup Simply Orange Juice
- 3 teaspoons honey
- 2 cups granola (Try my Homemade Granola)
- 2 cups diced pineapple
- coconut chips
Instructions
- Whisk together Greek yogurt, orange juice, and honey.
- To each of 4 small glasses or bowls, add ¼ cup yogurt mixture. Top with ¼ cup granola and ¼ cup pineapple.
- Repeat layers one more time.
- Top each parfait with a pinch of coconut chips.
- Serve parfaits immediately. Enjoy!
