This recipe uses simple, easy to find ingredients! Here's what you'll need:
- Pink Pineapple - These rose-colored pineapples are cultivated by Del Monte, and grown in Costa Rica. They're only sold in the U.S. and Canada, and they're not available in Hawaii. So they may be tricky to find, depending on where you love. A number of my local grocery stores carry them, and you can purchase the pineapples online, as well. I've paid anywhere from $8 to $10 for them (my local H Mart had the best price), so they are pricier than normal pineapples, and they are sold in an individual box. Note: Although these pineapples are only available from one brand, I purchased them with my own money. This is not sponsored post.
- Onion - A little red onion adds a great flavor and a little sharpness that contrasts perfect with the sweet fruit.
- Jalapeño - This recipe gets it's kick from a diced jalapeño, which gives the salsa a mild to medium heat. You can easily adjust the spiciness by removing the seeds and membranes from the jalapeño, and by adding more (or less) to taste.
- Lime - Fresh lime juice is a must for balancing the sweetness of the pineapple, as well as enhancing the other flavors.
- Cilantro - A bit of fresh cilantro gives this tasty fruit salsa its classic flavor. If you're not a fan, you can leave the cilantro out, or you could use flat leaf parsley instead.

This tasty pink hued salsa couldn't be easier to make! You'll find a detailed recipe card below, but here's a quick overview of the steps:
- Prep your ingredients. Start dicing the pineapple, red onion, and jalapeño (remove the seeds and membranes for less heat, too) into small, even pieces. Chop the cilantro, mince the garlic, and juice the lime. Tip: When handling the jalapeño, avoid touching your eyes, and make sure to wash your hands, knife, and cutting board thoroughly.
- Mix everything together. Combine the pineapple, red onion, jalapeño, cilantro, garlic, lime juice, and salt in a large bowl, then stir everything together really well.
- Season to taste. Try your salsa, the add additional lime juice and / or salt to taste.

- Pineapple - Feel free to make this recipe with a regular pineapple. A classic yellow pineapple will be more acidic than a pink pineapples, so I would recommend adding the lime juice to taste (start with one tablespoon).
- Fruit - Pair the pineapple with another fruit, such as mangos, strawberries, kiwis, papayas, oranges, or peaches.
- Veggies - You could also add veggies, like cucumbers, tomatoes, jicama, or corn.
