    Authentic Guacamole can be made with or without tomatoes, and personally, I can't resist it either way. But if you're looking for a simple Guacamole recipe with no tomatoes, then you're going to LOVE this easy recipe!

    This yummy avocado appetizer is a classic for a reason: it's one of the easiest dips you can make, it's loaded with flavor, and it's absolutely irresistible when paired with tortilla chips (and more). Sure you can buy it, but this homemade Guac tastes so much fresher and more flavorful than anything store bought!

    The best part? This easy recipe uses simple ingredients, and the dip takes just a few minutes to make. You'll be out of the kitchen before you know it, leaving you more time to snack or to hang out with your guests!

    Ingredients

    This easy recipe uses basic ingredients! Here's what you'll need:

    • Avocados - You'll use three large avocados for this recipe. For the best flavor and creamiest texture, look for Haas avocados which have dark, bumpy skin. They're the most popular variety sold in the US and can be found in most grocery stores.
    • Onion - A little onion adds lots of flavor, plus a little crunchy texture. I typically use white onions (their neutral color blends into the dip), but red or yellow onions will also work great.
    • Jalapeño - As far as chiles go, jalapeños are fairly mild, and they add the perfect amount of heat to this recipe. You can customize the dip by adding more (or less) to taste.
    • Cilantro - Fresh cilantro is a classic Guac ingredient, and it adds a distinctive, fragrant flavor. If you're not a fan, just leave it out.
    • Lime - A little fresh lime juice is a must! The juice brightens all the other flavors, and without it, you dip will taste flat.

    This recipe is naturally vegetarian, vegan, dairy free, and gluten free. Which means everyone at your table can enjoy it!

    How to Know Your Avocados Are Ripe

    There are two easy ways to tell if an avocado is ripe:

    1. Give it a gentle squeeze. When ripe, avocados should have a little give ... kind of like a peach. Avoid purchasing avocados that are soft and squishy, because they're probably overripe. If the avocado is hard, it isn't ready yet.
    2. Check the stem end. Remove the small stem. If it's green underneath, then your avocado is probably ready to eat (double check with the squeeze test). If it's brown and the avocado feels soft, then it's most likely overripe. If the stem doesn't want to come off (and the fruit feels firm), it's not quite ripe yet.

    If you purchase hard avocados, simply let them ripen on your counter (at room temperature) for a few days until they become tender. To speed up the process, store them in a closed paper bag.

    How to Make Guacamole without Tomatoes

    The yummy dip couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Mash avocado. Cut your avocados in half, them use a spoon to scoop them into a medium bowl. Lightly mash with a fork, leaving large chunks.
    2. Mix in remaining ingredients. Add the onion, lime juice, jalapeño, cilantro, and salt. Stir in gently.
    3. Season to taste. Taste your Guac, then add more lime juice and salt to taste, if needed.

    And that's all there is to it ... your simple Guacamole recipe without tomatoes is ready to enjoy! Wasn't that easy?

    Variations

    The best thing about this basic Guacamole is that you can easily customize it according to your preferences and the ingredients in your fridge! Try these ideas:

    • Smooth - If you prefer Guac on the smoother side, simply mash the avocado until all the chunks are gone. Tip: To make it even smoother, grate the onion and jalapeño, rather than chopping them, and finely mince the cilantro.
    • More / Less Spicy - Don't like spicy foods? Make sure to remove the seeds and membranes from the jalapeño before chopping it, and consider using less jalapeño (or leaving it out altogether). For a spicier dip, leave the seeds in your jalapeño, add a few dashes of hot sauce or ground cayenne, or use spicier peppers (such as habaneros or serranos).
    • Garlic - Although I skipped it here, I usually add a big garlic clove (minced) when making this recipe. It adds tons of flavor.
    • No Onion - Fee free to skip the onion if you're not a fan, or if you don't have any on hand.
    • No Cilantro - Not a cilantro fan? No worries, the dip will still be delish if you leave it out.
    • Toppings - For a gourmet spin on this Mexican classic, simply add some toppings before serving! A sprinkle of crumbled queso fresco or cotijo, grilled corn, pomegranate seeds, fruit (such as pineapple or mango), pickled onions (which are sooo easy to make), pepitas, or cilantro would all be delish.
    • Lemon - Out of limes? While the finished dip won't taste quite the same, you can use fresh lemon juice in a pinch.

    Serving Suggestions

    There are so many delicious ways to use Guacamole without tomatoes! Here are some ideas to try:

    • Pair with tortilla chips, crackers, pretzels, plantain chips, corn chips, or potato chips.
    • Serve with fresh veggies, such as grape or cherry tomatoes, bell peppers, carrots, cucumbers, or jicama.

    • Add a spoonful to any Mexican and Tex-Mex inspired dish before serving, such as Taco Casserole, Mexican Baked Eggs, Tex Mex Stuffed Sweet Potatoes, Black Bean Chili, Mexican Lasagna, or Black Beans and Rice, .

    Storage

    This recipe is best served fresh, but if you have leftovers, transfer the Guac to a small airtight container. Then place a small piece of plastic wrap directly on the dip, pressing out any air pockets. Cover, then refrigerate for up to three days. Before serving, scrape off any dip that has browned, then mix well.

    Ingredients

    • 3 large avocados
    • ¼ small onion, finely diced
    • 1 large, juicy lime, juiced
    • 1 jalapeño, seeded and finely diced
    • 2 tablespoons chopped cilantro
    • ½ teaspoon kosher salt

    Instructions

    • Cut avocados in half, remove pits, then scoop fruit into a medium bowl.
    • Use a fork to mash avocado, making it as smooth or chunky as you like.
    • Add onion, lime juice, jalapeño, cilantro, and salt to avocados. Stir gently to combine.
    • Taste, then add more salt and / or lime juice to taste.
    • Serve immediately. Enjoy!
