Ingredients
This yummy breakfast recipe uses basic, easy to find ingredients! Here's what you'll need:
- Berries - You'll need some fresh strawberries, of course. Choose the sweetest, most flavorful ones you can find for the best results.
- Oats - Old fashioned rolled oats work best for this recipe. Avoid using quick cooking, instant, or steel cut oats. They cook at a different rate, and they won't have the same texture.
- Nuts - Chopped walnuts add a lovely textural contrast to the softer oats, as well as a nutty flavor. Other nuts will also work, or you can leave them out if you prefer.
- Sweetener + Flavorings - You'll sweeten the oats with maple syrup, and you'll flavor it with a delicious + cozy combo of vanilla extract and cinnamon.
- Milk - Use 2% or whole milk for the best results. Plant based milks work equally as well. I usually use my favorite soy milk.
- Eggs - You'll need two large eggs to bind the other ingredients together.
- Leavener - A little baking powder lightens the texture and helps the oats rise as they bake.
- Salt - I recommend using kosher salt for this recipe. You need just a touch to enhance the other flavors.
This breakfast bake is naturally vegetarian, and it's easy to customize for other diets. Check out the Variations section below for tips on adapting the recipe to a gluten free, vegan, and / or dairy free diet.
You'll Also Need
You'll need a sharp knife, measuring cups, and a large bowl to mix everything together. To bake the oats, grab a square baking dish. I used my favorite Emile Henry square baker, which looks greats on the table, and it's super easy to clean, too.

Variations
This Strawberry Oatmeal Bake is fun and easy to customize! Here are a few ideas to try:
- Fruit - Have other fruit or berries on hand? Mix them in along with the strawberries.
- Frozen Fruit - Substitute frozen strawberries for the fresh berries.
- Nuts - Feel free to replace the walnuts with other nuts, such as pecans, pistachios, or almonds. You could also skip the nuts altogether, if you prefer.
- Sweetener - Swap out the maple syrup for honey or brown sugar.
- Spices - Experiment with other warm spices, such as cardamom, ginger, or nutmeg.
- Chocolate - Stir in chopped chocolate for a special treat.
- Peanut Butter - Swirl in a few tablespoons of peanut butter before baking (or drizzle over the top before serving) for a PB&J inspired version.
- Gluten Free - Although oats are naturally gluten free, there is a risk of cross contamination. If you have an allergy, make sure to use specially marked GF oats.
- Vegan - For a vegan / dairy free option, use plant based milk (I typically use soy milk, but any kind works) and skip the eggs (or use a vegan egg replacement).
- Cups - Bake individual servings of this recipe by cooking it in a nonstick muffin pan (or easy-to-clean silicone cups). Spray the cups well with nonstick spray first, and only fill them about three-quarters full. Cut the baking time by about 10 to 15 minutes (watch closely).

Serving Suggestions
Serve this Baked Strawberry Oatmeal hot, and enjoy it plain or heaped with toppings. A spoonful of yogurt is always delicious, as is extra berries and nuts. You could also add a little milk, especially if you prefer a more traditional oatmeal texture. This recipe is lightly sweetened, but you can drizzle the oats with maple syrup or honey, or top then with a sprinkle of brown sugar, if you need to satisfy a sweet tooth.
Storage
Store leftovers in an airtight container in your refrigerator for up to four days. Rewarm gently in your microwave before serving. If you'd like to freeze these baked oats, divide it into single servings first. That way, you can pull out an individual serving whenever you need a quick breakfast.
