    I've been eating tons of peaches this summer. This tasty fruit can be a little fickle (rock hard one minute, then over-ripe the next), but when you get a good one, there is nothing better!

    This scrumptious Peach Toast recipe is one of my all-time favorite peach recipes. It's truly one of the best (and easiest) ways to enjoy fresh peaches!

    You are going to love this tasty open faced sandwich (call it a tartine, if you want to get fancy!). It has mouthwatering sweet-savory flavor, pairing juicy peaches with tangy goat cheese, plus a little sweet heat from the hot honey. A sprinkle of fresh thyme is a flavorful finishing touch.

    Best of all, these summery toasts are quick and easy to make, plus simple to customize. You can throw this no fuss (but surprisingly gourmet) sandwich together in minutes. Making it perfect for busy summer days and laid back get togethers!

    Ingredients

    This Peach Tartine recipe uses simple, easy to find ingredients! Here's what you'll need:

    • Peaches - Of course, you'll need some fresh peaches! For the best results, choose the tastiest ones you can find, any variety will work. Tip: If your peaches are not ripe when you purchase them, let them sit on your counter at room temperature. You'll know they're ready to eat when they have a little give when you gently squeeze them.
    • Bread - Choose a crusty bread with a chewy texture for this sandwich (something that will hold up to the juicy fruit). I like to use sourdough, but a loaf of French or Italian bread, or any type of crusty artisan bread, will work just as well. You'll drizzle the bread with extra virgin olive oil before toasting it.
    • Cheese - Goat cheese and peaches are a match made in heaven! The fresh, creamy goat cheese logs you find in most grocery stores work great. Tip: If you're not a fan of goat cheese (also known as chèvre), you can substitute cream cheese instead. Check out the Variations sections below for more ideas.
    • Honey - This recipe calls for hot honey (find it at Amazon, World Market, or Target), and it's one of the best ways to use this gourmet ingredient! If you can't find it, feel free to use regular honey, then sprinkle some crushed red pepper flakes over the top. Not a fan of spicy foods? Regular honey works great, too!     • Thyme - A sprinkle of fresh thyme is a lovely finishing touch and pairs perfectly with the peaches, goat cheese, and honey.

    This recipe is naturally vegetarian! You can make it gluten free by using your favorite GF bread.

    You'll need a baking sheet (these sheet pans are my fave) to cook the toasts, as well as a sharp knife to cut the bread and slice the peaches (a serrated knife works great for this), and a butter knife to spread the goat choose on the toasts.

    How to Make Peach Toast

    This delicious Peach Goat Cheese Tartine couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Drizzle bread with oil. Start by slicing your bread about one-inch thick. Then drizzle both sides lightly with olive oil.
    2. Broil bread. Toast bread slices under your broiler for about one to three minutes or until lightly browned. Broil on other side, then remove from oven and sprinkle lightly with salt. Tip: Every broiler is different, so make sure to watch the bread closely as it cooks to avoid burning it.
    3. Add goat cheese. Spread the toasted bread with goat cheese.
    4. Top with peaches. Layer the sliced peaches over the goat cheese. Tip: One peach is enough to make two toasts!
    5. Drizzle with honey. Next, you'll drizzle the hot honey over the peaches ... about one to two teaspoons per toast. If you're using regular honey, you can also add some crushed red pepper flakes.
    6. Sprinkle with thyme. Finish your toasts by adding a sprinkle of fresh thyme.

    And that's all there is to it ... your fresh Peach Toast is ready to eat! Wasn't that easy? You are going to love this simple, yet scrumptious meal on a hot summer day!

    Tip: Too hot to turn on your oven? Try toasting the bread in your air fryer instead!

    Variations

    The flavors of this tasty sandwich are pretty perfect as-is, but if you feel like getting creative, here are a few ideas to try:

    • Roasted or Grilled Peaches - If you're feeling little ambitious, you can replace the fresh fruit with grilled or roasted peaches.
    • Other Fruit - Swap out the fresh peaches for another stone fruit, such as nectarines or apricots. Even plums would work.
    • Cheese - If you're not a goat cheese fan, try substituting cream cheese ... my husband loved this variation! Ricotta or feta could also be used.
    • Herbs - Other fresh herbs, like tarragon, rosemary, or basil, can be used in place of the thyme.
    • Honey - Hot honey can sometimes be difficult to find (although both Amazon, World Market, and Target carry it online). You can create a similar flavor by pairing regular honey with crushed red pepper flakes.
    • Bread - Although crusty, artisan-style breads will have a better texture and stand up to the juicy peaches best, almost any bread can be used here, even pre-sliced sandwich bread.
    • Crostini - You can easily turn this sandwich into a fun, party-perfect appetizer! Simply toast some crostini, spread with goat cheese, add a peach slice, then top with honey and thyme. Tip: Two peaches and four ounces (113 grams) of goat cheese is enough for about 20 crostini.

    Serving Suggestions

    You can served this open faced Peach Sandwich for breakfast, lunch, or dinner! It makes a great meal on its own (especially on a hot day), but you could also add a simple side to round things out.

    Try pairing this recipe with a salad to keep things light and easy! It would be great with this easy Green Salad, fresh Garden Salad, juicy Watermelon Feta Salad, or this basic Kale Salad.     Ingredients

    • 2 (1-inch thick) slices bread (such as sourdough)
    • 1 tablespoon extra virgin olive oil
    • pinch kosher salt
    • 2 ounces (57 grams) goat cheese
    • 1 large peach, pitted and sliced
    • 2 to 3 teaspoons hot honey
    • ½ teaspoon fresh thyme leaves

    Instructions

    • Preheat broiler with rack in upper position.
    • Drizzle both sides of bread slices with olive oil.
    • Broil bread until lightly browned and crisp, then flip and cook on other side (about 1 to 3 minutes per side). Watch closely so it doesn't burn.
    • Sprinkle toast lightly with salt, then spread with goat cheese.
    • Layer sliced peaches over cheese.
    • Drizzle peaches with hot honey, then sprinkle with thyme.
    • Serve toasts immediately. Enjoy!

    Notes

    I included measurements for the oil, honey, and thyme as a reference, but you don't need to measure these ingredients. Just use your judgement, and keep the bottles moving back and forth as you add the oil and honey so you don't add too much.
    Regular honey can be used if you don't like spicy foods. Or you can add crushed red pepper flakes if you can't find hot honey.
    Not a fan of goat cheese? Cream cheese also works great, or you could use feta or ricotta instead.
