They're just so cute, irresistible, and delicious, that it's easy to go overboard. While I definitely enjoy snacking on them, I love make these amazing Roasted Cherry Tomatoes just as much! I've made this recipe countless times, and it's truly a favorite.

    Ingredients

    You'll need just few simple ingredients to make this easy cherry tomato recipe:

    • Tomatoes - For the best results, make this recipe with the freshest, sweetest cherry tomatoes you can find.
    • Herbs - Choose your favorite fresh herbs for this recipe! I used thyme and rosemary, but basil would be delish, as would other herbs (like chives, parsley, sage, oregano, and more).
    • Garlic - The tomatoes are slow roasted with fresh garlic, which adds a wonderful savory flavor.
    • Olive Oil - You'll toss the tomatoes with extra virgin olive oil before cooking them.
    • Salt + Pepper - I recommend using freshly ground pepper and kosher salt.

    This recipe is naturally vegetarian, vegan, dairy free, nut free, and gluten free, so everyone at your table can enjoy it!

    PRO TIP: You can make this recipe with grape tomatoes and other varieties of small tomatoes, too!

    How to Make Roasted Cherry Tomatoes

    These Roasted Mini Tomatoes couldn't be easier to make! You'll find a detailed recipe card below (with measurements), but here's a quick overview of the steps:

    1. Mix tomatoes and oil. On a large baking sheet, combine the tomatoes and olive oil, then season with salt and pepper. Mix well. Tip: I like to roast the tomatoes whole (they stay juicier), but you can cut them in half, if you prefer. Just keep in mind that they may not take as long to cook.
    2. Roast. Transfer the tomatoes to your oven, then bake them for 10 minutes. Some of the tomatoes should be starting to pop.
    3. Stir in garlic. Mix in the minced garlic, then stir well. Continue roasting the tomatoes until they are shriveled and tender.
    4. Add herbs. Stir in the fresh herbs and season to taste with additional salt and pepper.

    So simple, right? And after just one taste, you are going to fall in love with these scrumptious Baked Cherry Tomatoes!

    PRO TIP: To make clean up easier, cover your baking sheet with parchment paper or nonstick foil before roasting the tomatoes.

    You can make this recipe with any type of small tomato. Grape tomatoes work great! Experiment with different varieties of herbs, such as rosemary, thyme, basil, parsley, sage, chives, or oregano. Toss with this yummy Pesto Dressing before serving.

    This yummy Oven Roasted Cherry Tomatoes recipe is so versatile! I used them to make a delicious Tomato Tartine (pictured below) and this Quinoa with Roasted Tomatoes, Kale, and Feta, but there are so many ways to serve them:

    • Appetizer - Pair the tomatoes with crusty bread or with Homemade Crostini (or Garlic Crostini) for an easy summer appetizer.
    • Side Dish - Serve this recipe alongside any summer main dish, such as this Pesto Gnocchi or this Mushroom Kale Quiche.
    • Breakfast - Add them to omelettes or scrambled eggs, or use them as a savory topping for pancakes, waffles, or oatmeal.

    Ingredients

    • 16 ounces (454 grams) cherry tomatoes (about 3 ½ cups)
    • 1 ½ tablespoons extra virgin olive oil
    • 1 large clove garlic, minced
    • 1 tablespoon minced fresh herbs (see note)
    • kosher salt
    • pepper

    Instructions

    • Preheat oven to 425°F (220°C).
    • Place tomatoes on a large baking sheet, the drizzle with olive oil, and season generously with salt and pepper. Mix well.
    • Bake tomatoes for 10 minutes, then remove from oven.
    • Stir in garlic, then return tomatoes to oven. Continue roasting until tomatoes are shriveled and some are popped (about 10 to 15 minutes more).
    • Remove from oven, then gently stir in the fresh herbs and season to taste with additional salt and pepper (if needed).
    • Serve immediately. Enjoy!

    Notes

    Tomatoes - Don't worry if you don't have the exact same amount of mini tomatoes. This recipe is very flexible! This recipe yields about 1 ⅔ cups roasted tomatoes, which will serve four people as a side dish.
    Herbs - Use your favorite fresh herbs! I used a combination of rosemary and thyme, but other herbs, such as basil, parsley, chives, oregano, or chives, would also work great.
    How to Use - You can eat these baked tomatoes on their own, or add them to other recipes, such as pizza, pasta, sandwiches, and more. Try them in this Tomato Tartine!
