Ingredients
For Salad Dressing:
- ¼ cup + 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons finely diced shallots
- ½ tablespoon dijon mustard (1 ½ teaspoons)
- ½ teaspoon kosher salt
- pepper
For Salad:
- ½ medium red onion, thinly sliced
- 2 extra-large tomatoes, cut into wedges (see note)
- handful fresh basil leaves, thinly sliced
Instructions
Prepare Dressing:
- Combine olive oil, vinegar, shallots, mustard, salt, and a few grinds pepper in a small bowl (or jar).
- Whisk (or shake, if using a jar) ingredients together until dressing looks thick and creamy.
- Season to taste with additional salt and pepper, if desired.
Prepare Salad:
